CO.A.T.I is a nod to Colorado Springs’ rebellious spirit, a call to the lost boys and an invitation to challenge everything. 

The mission of CO.A.T.I is to create compelling experiences and challenge the status quo. Our vision is to be a spark that ignites a more vibrant community.


The coati is known in Mayan culture for its insurgent nature and is widely regarded for its intelligence, curiosity, and playfulness. We hope our guests feel a sense of this in our space and take this attitude out into the Colorado Springs community.

In Mesoamerica, the coati is also referred to as “tejon”, a serendipitous tie to South Tejon. 


Founded in 2018, Atlas Restaurant Group (ARG) aspires to inspire and elevate the local community by challenging the status quo, breaking down barriers, and activating the creative potential of those around us. We approach food, beverage, and experience with creativity and innovation.


We have developed a strong infrastructure which allows us the opportunity to develop and operate concepts internally, while additionally supporting talented individuals and helping cultivate their dreams and make them a reality.


We encourage chefs, bartenders, event coordinators, and creative’s alike to dream beyond the imaginable and provide them with a strong support system along the way.


We create diversity in our team by seeking out those who are passionate about their individual specialities, acquired from the environments around them.


Atlas’ current concepts include: CO.A.TI Food Hall and Event Center, Piglatin Cocina, Ola Juice Bar, Ephemera Fine Dining, Anju Korean Street Eats, and Haole Hawaiian Grindz.
